    Quick and Easy

    Sometimes one just doesn’t have the time to cook!
    Be it because you had to stay at work until late, run late errands or just got caught up doing things around the house, it’s always useful to have some quick recipes for dinner at hand, so here go two that I have recently used and found pretty tasty (even if I say so myself)

    Lemon Chicken

     Serves 2

    2 chicken breasts diced

    Juice of 1/2 lemon

    2 tsp lemon grass paste

    2 garlic cloves crushed

    1 tsp finely chopped ginger

    1/2 red onion sliced 

    2 tbsp olive oil

    1 1/2 tbsp fish sauce

    3 tbsp water

     

    Heat up the olive oil, lemon juice, ginger, garlic and fish sauce in a frying pan. Turn the heat down, add the water and dilute the lemon paste in the sauce. Add and sauté the onion and once the sauce has reduced slightly add the chicken and cook through (it will take about 5 minutes).

    Serve it with boiled rice and broccoli stir-fried with soy sauce and chili.

     

    Or you could have…

     

    Roasted Mediterranean Veg Salad

     

    Serves 2

     

    1 aubergine cut into cubes

    1 thinly sliced red pepper

    1 sliced onion

    1 tin of chickpeas (drained)

    A good bunch of fresh parsley

    1 tsp hot paprika

    1 tsp honey

    Juice of ½ lemon

    5 tbsp Extra Virgin Olive Oil

     

     

    Arrange the aubergine, pepper and onion in a baking tray, brush with a little oil, sprinkle with salt and pepper and roast until brown and tender (20 minutes on gas mark 6 should do it).

    Mix the chickpeas, parsley and dressing with the roasted vegetables. Serve with couscous (or try quinoa if you are coeliac!) mixed with sun-dried tomatoes and dry apricots.

     

    And, of course, if it’s that late you can always have some delicious toast with your favourite spread; so make sure you enter our competition to win a fancy Dualit toaster just in case!
