
Happy Chocolate Week everyone!!
Across the country people are tasting, discussing and making all sorts of delicious things with one common ingredient: CHOCOLATE.
Now, who doesn’t like chocolate? I’m not obsessed with it nor feel the need to eat it every day as I’m more of a savoury kind of girl, but who am I to ignore a nation-wide celebration?
Exactly.
It would be very bad form to not include a sweet treat among this week’s recipes and one of my latest experiments in the kitchen that encapsulates both the spirit of this week and the season, so here’s my recipe for an easy yet tasty Chocolate and Pumpkin Loaf.
Makes one loaf (30cmx10cm)
1 egg
1 cup brown sugar
50 gr dark chocolate melted
2/4 cup vegetable oil
3/4 cup pumpkin puree (stew pumpkin in water and 1 tsp brown sugar, drain, mash - Voila!)
1/2 tsp vanilla extract
1 1/4 cup self-rising flour
1/2 tsp baking soda
1 tsp ground cinnamon
1 tsp ground nutmeg
In a big bowl mix the egg, sugar and chocolate until you have a smooth cream.
Add the remaining ingredients and mix well (if you are as lazy as me mix with a handheld electrical mixer - I had no patience yesterday. Can you see a pattern here?!).
Pour in the tin and bake in the oven at gas mark 6 (180C) for 30 minutes.
Take out, let it cool and enjoy with a cup of tea!
